Slow Cooker Lemon Pepper Shredded Chicken
You know those rainy weekend days when you’re craving something cozy? Maybe you’ve just flopped on the couch from working all week. Perhaps you’ve crawled back into bed after cleaning your entire house (more likely just thought about it and got exhausted). All I want on days like that is to smell something wonderful cooking in the kitchen, perfuming the house while I have a Harry Potter movie marathon with my husband. My slow cooker lemon pepper shredded chicken is perfect for lazy weekend days, or even weekdays when you’re too stressed to even thing about cooking. The great thing about it is it can be used in anything, but we often eat it in tacos, salads, and sandwiches.
Hack: Make the whole thing easier on yourself and use one of those crockpot liners. Your future self will thank you.
Ingredients:
Chicken breasts 2 lbs
Lemon pepper (with salt)
Garlic powder
Onion powder
Chicken broth 1 can
Lemon juice (can be fresh or from a little bottle)
Performance:
I began by putting a crockpot liner in my crockpot (this seriously makes cleanup nonexistent later). Then I put in the chicken, chicken broth, a squeeze of lemon, and spices to taste. I set my crockpot to 4 hours on HIGH (if you've got more time you can set it to 8 hours on LOW) and went about my day. Once it’s done it can easily be shredded with two forks. You’re welcome.
